Oatmeal & Date Energy Bites

- 2 cups oats
- ½ cup unsweetened shredded coconut
- Seed trio:
- 2 Tbsp chia seeds
- 2 tbsp hemp seeds
- ¾ cup ground flax
- ½ cup dried dates, chopped
- ½ cup dark chocolate chips
- 1 cup sunflower butter (or peanut butter butter)
- ⅓ cup honey
- In a large bowl, mix together all ingredients. Cover and refrigerate for ~ 1 hour.
- Roll into small balls. Store in fridge or freezer.
