Power Cookies
As I talked with Asako, I realized that we both share a passion for food and nutrition and using the power of nutrition to contribute to our health and wellness. It turns out that Asako is also a nutrition consultant with a passion for recipe creation using unique ingredients! She is a Certified Holistic Nutrition Consultant with Mindful Nutrition.
I asked Asako if she would share the recipe – and generously, she did and gave me permission to share on my website.
Asako’s recipe uses some unique ingredients, which is what also made this recipe so intriguing.
- Coconut oil which gives a subtle coconut flavour reminiscent of “Dad’s Cookies”.
- Different flours and grains – I liked that we were using different flours and grains for these power cookies. Spelt flour is a kind of ancient wheat. Oat flour and oats also contribute some soluble fiber to the cookie. Variety is the spice of life!
- Whey protein – Another ingredient that I had not thought to add into my baking was whey protein. This helped to increase the protein in these cookies. If you don’t have whey at home, you could likely substitute with a skim milk powder.
- Coconut palm sugar – This recipe also calls for coconut palm sugar to give these cookies some sweetness while also contributing to the color of the cookies.
We added in chocolate chips. However, I could imagine enjoying a mixture of chocolate chips, dried fruit, seeds and chopped nuts for a portable and filling snack.
Asako and I spent the day baking several batches of these for an upcoming hockey tournament our team is hosting. You can see from these pictures that the cookies’ portion sizes are generous! However, you could easily make smaller cookies to make these more snack-sized.
I hope you enjoy this recipe as much as our team did.
- Preheat oven to 375 degrees F.
- 1 cup Spelt flour
- ½ cup Oat flour (I like Cream Hill Estates)
- ½ cup Whey protein powder
- 2 Tbsp Flax seeds (optional)
- 1 tsp baking soda
- ½ tsp sea salt
- 1 cup Coconut oil (room temperature)
- 1 & ¼ cup coconut palm sugar
- 2 Large eggs
- 3 cups Rolled oats
- 1 cup Chocolate chips
- In a large bowl, mix together spelt flour, oat flour, whey protein powder, flax seeds (if using), baking soda and salt.
- In a medium bowl, using a hand mixer, cream together the coconut oil with the coconut palm sugar. Then add in the eggs.
- Add the coconut oil/sugar/egg mixture to the flour mixture until combined, being careful not to over mix. If the recipe seems too dry, you can add in a few tablespoons of melted coconut oil.
- Using your hands, massage in the rolled oats and chocolate chips.
- Scoop individual cookies onto a parchment-lined baking tray, flatten with the palm of your hand. Bake for 10 minutes.
- Enjoy!

I tried these out this weekend and they are fabulous!!!! I added raisins with the chocolate chips. I will definitely make them again.
