This marinated baked tofu makes for a less-expensive alternative to meat or poultry.

Ingredients
1 block firm tofu
¼ cup low sodium tamari or soy sauce
1 tsp garlic powder
½ tsp liquid smoke
Instructions
Place block of tofu in a glass container. Wrap in a clean dish towel and place a plate or book overtop to help drain. If short on time, skip this step.
Meanwhile, in a bowl, mix together the tamari, garlic powder and liquid smoke. Pour over the tofu and allow to marinate for 15 minutes.
Preheat oven to 350 degrees F.
Remove tofu from marinade, and place on a parchment-lined baking sheet. Bake for 15 minutes, then flip over and bake another 10 minutes.
