I love Sweet Potato Chips - but they are expensive and "heavier" than they need to be. Here is a healthified version of store bought chips.

Ingredients
1 medium sweet potato, very thinly sliced with a knife, food processor or mandolin
2-3 Tbsp melted butter or other liquid fat
½ tsp Sea salt
Instructions
Preheat oven to 400 degrees F.
Place prepared sweet potatoes in a large bowl. Toss with melted butter and sea salt, ensure all surfaces of sweet potato are thinly coated.
Place an oven-proof cooling rack on a baking sheet. Then, lay out the prepared sweet potatoes in a single layer so they roast and get crisp (rather than steam which would happen if not elevated from the baking sheet). Roast for about 8 minutes or until crispy and slightly browned. Enjoy!
