  • ¼ cup Mint leaves, chopped
  • Cashews
  • Dressing
  • ⅓ c peanut butter
  • 1 tbsp sesame oil
  • Juice of a lime
  • 2 Tbsp rice wine vinegar
  • 2 tbsp honey
  • ¼ cup soy sauce
  • 2 tbsp water
  • 2 cloves garlic
  • 1 tsp ginger
  • 1 tsp sweet Thai chili sauce
