This tomato olive caper sauce is perfect for serving with fish, chicken, pork, tofu, cooked beans or pasta.

  • 1 tbsp Extra-virgin olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 ounces) diced tomatoes, drained
  • ½ cup capers, drained
  • ½ cup, pitted green olives
  • 2 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • salt to taste
  1. In a large pan over medium heat, heat the extra-virgin olive oil and saute the onion until softened, about 5 minutes. Add in garlic and stir.
  2. Add in diced tomatoes, capers, green olives, balsamic vinegar and dried oregano. Simmer and serve! Enjoy with fish, chicken, pork, tofu, cooked beans.
