I originally stumbled on this recipe when a fellow colleague Kelsey Gilks published it on her blog. This blog has since been discontinued, but these cookies remain a staple in our kitchen.

Ingredients
  • 2 & ¼ cups oats
  • 2 cups whole wheat flour
  • 1 cup sunflower seeds
  • ¾ cup pumpkin seeds
  • ½ cup shredded coconut
  • ¼ cup whole flax seed
  • ½ cup sugar
  • 2 tbsp cinnamon
  • pinch of salt
  • 1 & ¼ cups chocolate chips
  • 1 cup raisins or dates
  • ¼ cup water
  • ¼ cup molasses
  • ½ cup melted butter
  • 1 cup milk
Instructions
  1. Preheat over to 350 degrees F.
  2. In a large bowl, stir together the dry ingredients: oats, whole wheat flour, sunflower seeds, pumpkin seeds, shredded coconut, whole flax seed, sugar, cinnamon, salt, chocolate chips, raisins/dates.
  3. In a small mixing bowl, combine the wet ingredients: water, molasses, melted butter, milk.
  4. Add wet ingredients to dry ingredients. Stir until combined. Portion cookies using a large scooper (1/4 cup). Place on a baking tray lightly misted with vegetable oil spray.
  5. Bake at 350 degrees for 20 minutes. Using this portion will yield about 24 cookies. If making smaller cookies (small scoop), reduce baking time.
