Ingredients
  • Preheat oven to 375 degrees F.
  • 1 cup Spelt flour
  • ½ cup Oat flour (I like Cream Hill Estates)
  • ½ cup Whey protein powder
  • 2 Tbsp Flax seeds (optional)
  • 1 tsp baking soda
  • ½ tsp sea salt
  • 1 cup Coconut oil (room temperature)
  • 1 & ¼ cup coconut palm sugar
  • 2 Large eggs
  • 3 cups Rolled oats
  • 1 cup Chocolate chips
Instructions
  1. In a large bowl, mix together spelt flour, oat flour, whey protein powder, flax seeds (if using), baking soda and salt.
  2. In a medium bowl, using a hand mixer, cream together the coconut oil with the coconut palm sugar. Then add in the eggs.
  3. Add the coconut oil/sugar/egg mixture to the flour mixture until combined, being careful not to over mix. If the recipe seems too dry, you can add in a few tablespoons of melted coconut oil.
  4. Using your hands, massage in the rolled oats and chocolate chips.
  5. Scoop individual cookies onto a parchment-lined baking tray, flatten with the palm of your hand. Bake for 10 minutes.
