Ingredients
Preheat oven to 375 degrees F.
1 cup Spelt flour
½ cup Oat flour (I like Cream Hill Estates)
½ cup Whey protein powder
2 Tbsp Flax seeds (optional)
1 tsp baking soda
½ tsp sea salt
1 cup Coconut oil (room temperature)
1 & ¼ cup coconut palm sugar
2 Large eggs
3 cups Rolled oats
1 cup Chocolate chips
Instructions
In a large bowl, mix together spelt flour, oat flour, whey protein powder, flax seeds (if using), baking soda and salt.
In a medium bowl, using a hand mixer, cream together the coconut oil with the coconut palm sugar. Then add in the eggs.
Add the coconut oil/sugar/egg mixture to the flour mixture until combined, being careful not to over mix. If the recipe seems too dry, you can add in a few tablespoons of melted coconut oil.
Using your hands, massage in the rolled oats and chocolate chips.
Scoop individual cookies onto a parchment-lined baking tray, flatten with the palm of your hand. Bake for 10 minutes.
