My colleague and friend, Melanie Ksienski, a Consulting Dietitian, contributed this recipe as part of a recent cooking class, offered through Wellspring Calgary, an organization that supports people in their cancer journey. This recipe is soft in texture and high in protein, something that is especially important for people living with cancer. In preparation for teaching this cooking class, I tested this recipe on my family. They loved it!
My husband said that he would like to know the recipe as he would like to add it to his list of recipes to make for dinner. I was pleasantly surprised that my kids loved this dish, despite it being full green spinach! They had been playing outside when I called them in for lunch. With big appetites created, they gobbled this crustless quiche up. Kids who come to the table hungry are more likely to accept the foods you offer – or maybe I just got lucky.
