Strawberry Avocado Salsa
This Strawberry Avocado Salsa screams summer! It is a delicious and satisfying snack or appetizer. You can substitute in any fresh fruit in place of the strawberries, like apples, peaches or cherries. Enjoy with a cool glass of crisp white wine (enjoy responsibly).
- 8 oz (1½ cups) strawberries, diced
- ½ small red onion, diced
- ¼ cup fresh, chopped cilantro
- 1 large avocado, peeled and diced
- Juice of one lime
- Salt and pepper to taste
- If desired, add a jalapeno pepper, diced
- Combine all ingredients in bowl, drizzle with lime juice and toss.
- Add salt and pepper to taste.
- Chill in fridge until ready to serve. We’re serving our salsa with tortilla chips.
Enjoy as a topping to grilled chicken or fish, as a topping to a plant-based burger, as a topper to a spinach salad or with tortilla chips.
