Tomato Olive Caper Sauce Recipe
- 1 tbsp Extra-virgin olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 can (28 ounces) diced tomatoes, drained
- ½ cup capers, drained
- ½ cup, pitted green olives
- 2 tbsp balsamic vinegar
- 1 tsp dried oregano
- salt to taste
- In a large pan over medium heat, heat the extra-virgin olive oil and saute the onion until softened, about 5 minutes. Add in garlic and stir.
- Add in diced tomatoes, capers, green olives, balsamic vinegar and dried oregano. Simmer and serve! Enjoy with fish, chicken, pork, tofu, cooked beans.
