Crustless Spinach Quiche made in 5 minutes

If you are looking for a fast-to-make dinner, this recipe is for you! It takes 5 minutes to prepare, and can be made in one bowl!

My colleague and friend, Melanie Ksienski, a Consulting Dietitian, contributed this recipe as part of a recent cooking class, offered through Wellspring Calgary, an organization that supports people in their cancer journey. This recipe is soft in texture and high in protein, something that is especially important for people living with cancer. In preparation for teaching this cooking class, I tested this recipe on my family. They loved it!

My husband said that he would like to know the recipe as he would like to add it to his list of recipes to make for dinner. I was pleasantly surprised that my kids loved this dish, despite it being full green spinach!  They had been playing outside when I called them in for lunch. With big appetites created, they gobbled this crustless quiche up. Kids who come to the table hungry are more likely to accept the foods you offer – or maybe I just got lucky.

What do I love about this crustless quiche recipe? 

  • It is fast to make! Seriously, you can prepare this recipe in 5 minutes. While it takes 45 minutes to cook, I can be doing something else during that time…cleaning up the kitchen, organizing, answering emails, etc.
  • You can enjoy this recipe as a quiche, or cook this recipe in muffin tins for quiche-muffins, which are great for packing lunches, as well as grab and go meals and snacks.
  • You can prepare this quiche and freeze it.
  • You can substitute other cooked vegetables in place for the spinach.
  • This recipe works for dinner, but also would be an excellent breakfast, brunch or lunch.

Crustless Spinach Quiche

This delicious crustless quiche can be prepared in 5 minutes.

Serves: 8-10
Ingredients
  • 1 pckg frozen chopped spinach, defrosted. Use a paper towel to squeeze out excess moisture
  • 1 500 gram container of cottage cheese (~ 2 cups)
  • 1 cup (250 ml) milk (1%)
  • 2 cups grated cheese (cheddar, mozzarella or whatever’s your favourite!)
  • 6 eggs
  • ½ tsp of Mrs. Dash or other seasoning
  • 1 cup flour
Instructions
  1. Preheat oven to 350 degrees.
  2. Lightly mist a 9x13 baking dish or pie plate with non-stick cooking spray.
  3. Mix all ingredients together in a large bowl.
  4. Pour into prepared baking dish and bake for 40-45 minutes until slightly golden brown on top, and cooked all the way through.
