Avocado Lime Mint Dressing
I created this recipe for Avocado Lime Mint Dressing as part of my final assignment in culinary school. This dressing is delicious over my Thai Curry Fish Cakes – and could also be enjoyed with chicken, and as part of a regular salad.
- 1 avocado, peeled with pit removed
- ½ cup loosely packed fresh mint
- ¼ cup oil
- ¼ cup water
- Juice of 1 lime
- ¼ cup sweetener, as per taste
- Sea salt, as per taste
- Blend the above ingredients together.
