Garlicky Green Goddess Dressing

This garlicky green goddess dressing is a rich and creamy dressing that is full of powerful antioxidants and nourishing ingredients. Your insides will smile, as will your tastebuds!

In our home, it has become a salad dressing staple, which we make on the weekend to enjoy throughout the week.Serve with Garden Vegetable Rice Wraps, or salad.

Notes:

•  This recipe is naturally gluten free* which is important for people who have a medical need to avoid gluten.

•  Store-bought salad dressings may have wheat flour, malt vinegar or soy sauce (made from wheat), or may have seasonings that contain gluten.

While this recipe is healthful and nourishing, it is still rich in energy, so mindfully enjoy this dressing as an accompaniment to what you are eating.

This recipe is adapted from Chef Marti Wolfson, who demonstrated a variation of this recipe at the Nutrition Intuition in the Kitchen Conference, held in Connecticut.

Ingredients
  • 1 avocado, peeled with pit removed
  • 1 cup loosely packed fresh herbs: mint, parsley, chives, basil
  • 1-2 garlic cloves, sliced
  • ¼ cup extra virgin olive oil
  • ¼ cup water
  • 2 Tbsp apple cider vinegar
  • Juice of ½ lemon
  • ¼ cup sweetener (I used agave nectar), as per taste
  • Sea salt, as per taste
Instructions
  1. Add all the ingredients to a blender or food processor.
  2. Blend until smooth.  Taste.
  3. Add in sea salt and sweetener, as per your taste preference. I used a dark sea salt and agave nectar.  You could also use honey.
