Apple Poppyseed Coleslaw

Looking for an upgrade to your usual summertime salad? This recipe for Apple Poppyseed Coleslaw adds in satisfying crunch from the cabbage, carrots and green onions and a burst of sweetness from the apples. Cabbage is a vegetable that has staying power in your fridge. Include this on your weekly grocery shopping list for an inexpensive vegetable that can be enjoyed throughout the week.

To save time, use a bagged coleslaw. Serve with pulled pork, grilled chicken or a plant-based burger.

Ingredients
  • Salad:
  • 4 cups cabbage, thinly sliced/shredded (or packaged coleslaw salad blend)
  • 1 large carrot, julienne/grated
  • 2 green onions, diced
  • 2 apples, chopped
  • 3 tbsp finely diced parsley
  • Dressing:
  • 2 tbsp cider vinegar
  • ½ cup mayonnaise
  • 3 tbsp honey
  • 2 tbsp poppy seeds
  • Salt and pepper to taste
Instructions
  1. In a small bowl stir together the poppy seed dressing.
  2. In a large bowl assemble the salad ingredients.
  3. Toss the dressing over the salad and refrigerate for an hour or more before serving.

    This is a lovely and crunchy looking salad. Have you tried using thickened yogurt instead of mayonnaise? Yogurt’s whey might leak a bit. Could adding cornstarch help with the thickening of the yogurt?
    Do you have a similar recipe without mayo?
