Avocado Lime Mint Dressing

I created this recipe for Avocado Lime Mint Dressing as part of my final assignment in culinary school.  This dressing is delicious over my Thai Curry Fish Cakes – and could also be enjoyed with chicken, and as part of a regular salad.

This salad dressing is a bright and flavourful dressing. For a thicker dressing, add in less water.

  • 1 avocado, peeled with pit removed
  • ½ cup loosely packed fresh mint
  • ¼ cup oil
  • ¼ cup water
  • Juice of 1 lime
  • ¼ cup sweetener, as per taste
  • Sea salt, as per taste
Instructions
  1. Blend the above ingredients together.
