As I talked with Asako, I realized that we both share a passion for food and nutrition and using the power of nutrition to contribute to our health and wellness. It turns out that Asako is also a nutrition consultant with a passion for recipe creation using unique ingredients! She is a Certified Holistic Nutrition Consultant with Mindful Nutrition.
I asked Asako if she would share the recipe – and generously, she did and gave me permission to share on my website.
Asako’s recipe uses some unique ingredients, which is what also made this recipe so intriguing.
We added in chocolate chips. However, I could imagine enjoying a mixture of chocolate chips, dried fruit, seeds and chopped nuts for a portable and filling snack.
Asako and I spent the day baking several batches of these for an upcoming hockey tournament our team is hosting. You can see from these pictures that the cookies’ portion sizes are generous! However, you could easily make smaller cookies to make these more snack-sized.
