Hemp Seed Tabouli Salad
Tabouli is a classic Mediterranean Salad that usually includes a cooked whole grain called bulgur. In this recipe, I used hemp seeds in place of the bulgur for a different variation of this salad.
This Hemp Seed Tabouli used a chop and drop method: chop up the ingredients, and drop them into the bowl!
Hemp Seed Tabouli Salad
- ½ cup hemp seeds
- 1 tomato, seeded and diced
- ½ English cucumber, diced
- 1 cup fresh herbs (parsley, dill, mint), chopped including leaves and stems
- 2 tbsp extra virgin olive oil
- Juice and rind of half a lemon
- 1 garlic, minced
- ½ tsp salt
- Chop and drop all ingredients into a bowl and mix.
