Weeknight meal: Ground Beef Edamame Noodle Bowl

Weeknight meal: Beef Edamame Noodle Bowl Ingredient Profile

Ground beef – I used lean ground beef over extra-lean. While I prefer a lower fat ground beef, it is also more expensive. By draining and rinsing the lean ground beef, I am able to further lower the fat in the lean ground beef. Other food swaps for ground beef can be ground chicken or ground turkey, which are leaner for your meal, but usually pricier.

Edamame beans – I love stocking frozen and shelled edamame beans in my freezer. They are a plant-based protein rich in fiber that add in nutrition to this bowl. They are an affordable way to add in plant-based nutrition to your meals.

Frozen stir fry mix – Any frozen vegetable will work in this bowl. Using frozen vegetables is like having your own private sous chefs on call. Simply open the bag and drop in your pan to heat. You can see that I also added in frozen peas, adding in a further boost of vegetable power.

Whole grain ramen noodles – These whole grain ramen noodles are made from millet and brown rice. Because these are made from the whole grain, there is additional fiber and protein to this dish. I found these in the health food aisle of the grocery store. If you are reducing the carbohydrates in your meal, you can reduce your portion of these noodles or you can swap in spiralized zucchini noodles.

This Ground Beef Edamame Noodle Bowl is a delicious, family-friendly weeknight meal where everyone can customize what they put into their own bowl.

Ingredients
  • 1 pound of lean ground beef
  • 2 - 3 ounce blocks of whole grain ramen noodles
  • 3 tbsp hoisin sauce
  • 2 tbsp lower sodium soy sauce
  • 2 tsp brown sugar
  • 1 tsp Chinese five-spice powder
  • 1 tsp fresh ginger, grated
  • ⅓ cup water
  • 3 green onions, thinly sliced
  • 1 cup frozen, shelled edamame beans
  • 1 cup frozen peas
  • 360 g packed, frozen stir fry mix
  • 1 tbsp sesame seeds
Instructions
  1. In a large skillet, over medium-high heat, brown the ground beef until cooked.
  2. While the beef is cooking, heat up a large pot of water until boiling. Then add the whole grain ramen noodles, and cook as directed on the package, usually for under 5 minutes.
  3. Meanwhile, in a separate bowl, mix together the hoisin sauce, soy sauce, brown sugar, Chinese five-spice powder, fresh ginger and water.
  4. Drain and rinse the ground beef under water to further reduce the fat in the ground beef. Return to the pan. Add in green onions, shelled edamame beans, stir fry mix, frozen peas and sauce. Heat through. Top with sesame seeds.
  5. To serve, place noodles in a bowl. Top with ground beef edamame mixture.

I was able to enjoy this Weeknight Ground Beef Edamame Noodle Bowl for lunch the next day, swapping out the noodles with leftover rice. I think it looks way more appealing!
